The end of Get Fit Friday


I've enjoyed sharing my weight loss story and I'm hoping I helped to get a few people on the right track. I was once where you were, I didn't know where to start or what to do. For me, learning to lose weight was trial and error. I had to learn what worked and what didn't. I'm ending with one more set of healthy meals. Ingredients: 
Strawberries
blueberries
low-fat greek yogurt

Boca Crumbles Vegetarian Stuffed Bell Peppers

Ingredients:
3 bell peppers (red or green)
1 small onion, chopped
1 teaspoon chopped garlic
1/8 tablespoon olive oil
1 (14 1/2 ounce) can stewed tomatoes
1 1/2 cups frozen soy crumbles (I use Boca Brand)
1 cup cooked brown rice (I use Uncle Bens ready made)
3 -4 tablespoons ketchup
1 -2 tablespoon mustard


Instructions: Sauté onions and garlic in oil until soft. Meanwhile, cut peppers lengthwise and clean out seeds & membrane. Add undrained tomatoes, boca crumbles and rice to softened onion mixture. Simmer until well combined. Add ketchup and mustard **NOTE** Add more or less depending on how thick/thin sauce is. It should be just thick enough to remain in peppers. Play with it and add it to taste! Put pepper shells in a 13x9 and spoon mixture into peppers and cook covered with foil for 1 to 1 1/2 hours at 350°F or until peppers are soft.

Grilled Avocado with fresh Salsa

Ingredients:   
2 avocados
1 large tomato, cored and cut into 1/2-inch cubes
1 tablespoon chopped fresh cilantro
1 tablespoon finely chopped scallion
2 teaspoons finely chopped seeded jalapeno
1 teaspoon freshly squeezed lime juice
1 teaspoon extra-virgin olive oil plus additional for grilling
1/8 teaspoon salt plus additional to taste

Instructions: 
Halve the avocados length-wise; pit and peel. Slice a thin layer from the rounded bottom of each half so that it sits flat. In a small bowl, combine the tomato, cilantro, scallion, jalapeno, lime juice, 1 teaspoon oil and 1/8 teaspoon salt. Add salt to taste if necessary. Heat the grill to high. Brush avocado halves lightly with oil; grill 1 minute a side, until lightly charred. Place avocado halves on a platter; spoon tomato salsa into wells. Serve immediately.

Ingredients:
Sugar-free jello mix
Plain Chobani yogurt

Instructions: 
Mix the jello into the yogurt and freeze. Enjoy!
